A tent o’fun!

I have no clue what my title means but I’m going camping tomorrow and I can’t wait! In preparation for it all everyone has delegated items to bring. As for me it’s beer and pasta salad. I’m leaving the beer up to the hubby and my brother to get and I had fun creating the pasta salad.

Basic Pasta Salad


    Ingredients for pasta salad:
  • spinach penne (that's what I had on-hand so that's what I used but any will work)
  • 1 HUGE garlic clove crushed
  • 1 leek, trimmed and sliced
  • 1 can organic white kidney beans rinsed and strained
  • 1 tbsp oregano (dried or fresh)
  • 1/4 tsp paprika
  • 1 tsp vegetable oil (for sauteing)
  • 2 cups grape tomato
  • 1 medium summer squash cut into half moons then halved again (little triangles basically)
  • 1 1/2 cup endamame
  • 1 small bag of snow peas (hello had a moment and didn't add them! Literally just tossed them in)
  • 1 cucumber seeded and cut into small triangles
  • about 5 small mushrooms sliced (that's all I had left lol)
  • 1/2 cup sliced olives
  • Top with sliced raw peppers
  • Dressing:
  • 1/2 cup vegetable oil
  • 1/2 cup white balsamic vinegar
  • 1/4 cup red wine vinegar (I love vinegar can you tell?)
  • 1/2 close minced garlic
  • 1/2 tbsp dijon mustard
  • 1/2 sweet red onion diced
  • salt and pepper to taste


  1. Cook pasta acording to package.
  2. Saute mushrooms until they're brown on medium heat (about 3 minutes). Once browned toss in zucchini, garlic, paprika, and salt and pepper to taste. After about 2 or 3 minutes toss in the beans. Here is where I added more garlic because I'm addicted. Cook until all vegetables are to your liking.
  3. Remove from heat and let cool. Once cool and put into a dish.
  4. Make dressing and store in a separate container until ready to serve. The salad is best dressed about 30 minutes before serving.
  5. *tip, use any vegetables on hand! Seriously, anything! Shrimp? Yup. Corn? Sure throw it in there! No noodles? Orzo? Go on ahead! Go crazy! Tuna, beef whateva!
